Gallon
A gallon is 128 ounces. On a more interesting note, a gallon is 5 bottles of wine,
corresponding to about twelve pounds of grapes. Of course in Italy wine is measured
in liters, not gallons.
Glycerol
Glycerol is a sweet
alcohol produced during
fermentation. Because it composes
less than 10% of the wine’s alcohol, it has little effect on the wine’s
viscosity (gooeyness).
Grafting
The process of growing a shoot or bud of a European
Vitis vinifera grape on American
or
hybrid, resistant
rootstock. This process ‘saved’ the
classic wine industry
when almost all European vines were dying due to an infestation of the
Phylloxera louse, which interestingly enough came to Europe from the United
States. Some believe that ungrafted vines produce better wines than grafted ones.
Green harvest
The practice of removing unripened grape bunches, augmenting the
quality by reducing the
yield per vine.
Too many grapes on a vine lead to a thin, relatively tasteless wine.
Grey Rot
A vine affliction caused by the same fungus,
Botrytis Cinerea,
that causes
Noble Rot.
Grey Rot occurs when the humidity is excessive.
