I Love Italian Regional Cooking - Pairing Veneto Cuisine With White Wine

Great Veneto food, fine Venetian or other white wine...

Veneto is a watery region of northeastern Italy. It’s home to rivers, lakes, lagoons, and some of the most famous canals in the world. With all this water, you can expect some fish and seafood specialties to accompany the region’s white wines. We are including additional recipes, and additional Italian white wines plus one red sparkling wine that you really should try.

Broeto (Venetian Fish Soup) includes the catch of the day. Traditional ingredients include Scorpion Fish, Goby, Grey Mullet and Baby Grey Prawns. Try pairing this delicious soup with a local Soave Classico DOCG.

Sardelle in Saor (Sardines in Saor) is an antipasto. I’m not sure that I like the idea of raisins with my sardines. Marinate this dish for a day or two before serving. Try it with a local Bianco di Custoza DOC which may be hard to find, a Lugana DOC from the shores of Lake Garda mostly in Lombardy but also in Veneto, or a local Soave Superiore DOCG.

Capesante in Tecia ( Scallops on the half shell) is a fairly quick, but tasty scallop dish. Wine pairings include the bubbly Franciacorta DOCG from Lombardy, Trebbiano di Romagna DOC from Emilia-Romagna, and Verdicchio di Matelica DOC from The Marches. The Franciacorta is Italian “Champagne” and priced accordingly. The other two are much more pedestrian wines.

Some people like Baccala’ alla Vicentina (Dried Cod Stewed in Milk) that includes anchovies and Parmesan cheese among other ingredients. This recipe takes a long, long time. You have to soak the cod for at least 3 days. After preparing the cod, cook the mixture for at least three hours, shaking it from time to time. Then let it sit for a day before reheating. Wine pairings include Lugana DOC and Soave Superiore DOCG.

Finish your meal, especially at Christmas time, with Pandoro (Pandoro) a cake with lots of butter, some cream, eggs (especially egg yolks) and grated lemon peel. Pairings include the white sparkling wine Asti DOCG (formerly known as Asti Spumante) or the red sparkling wine Brachetto d’Acqui DOCG also known as Acqui DOCG. Both wines are from Piedmont.
